Bacon and Pumpkin Soup

Pumpkins are a nutritional powerhouse. They boast high levels of a variety of vitamins and minerals, including iron, magnesium, niacin, potassium, vitamin A, and vitamin C. The only downside is that they also contain a fair amount of natural sugar (1.6g per cup), so beware the calorie count when adding into a sweet dessert.


Bacon and Pumpkin Soup

Makes 4 servings


2 slices fresh turkey bacon, chopped
1 cup organic applesauce
1 onion, chopped
2 tsp. ground ginger
1 large can organic pumpkin puree
1/2 cup light sour cream
3-1/2 cups organic non-fat low-sodium chicken broth
(Celtic preferred) Sea Salt
to taste
Pepper to taste


  • Saute bacon and onion without any oil or butter; drain fat.
  • Add can of pumpkin, chicken broth, applesauce, and ground ginger.
  • Add salt and pepper; bring to boil.
  • Simmer. Add light sour cream.
  • Enjoy!
