The doctrine of signatures is a philosophy shared by herbalists from the time of Dioscurides and Galen (around 50 A.D.). This doctrine states that herbs that resemble various parts of the body can be used to treat ailments of that part of the body. Scientists see the doctrine of signatures as superstition. There is no scientific evidence that plant shapes and colors help in the discovery of medical uses of plants. Another name for this phenomena is Teleological Nutritional Targeting.
That doesn’t mean it’s not a good hypothesis. Vegetables and fruits are good for you anyway, so if you want to try and follow this doctrine, it’s not going to hurt you.
A sliced Carrot looks like the human eye.
