It’s a Different Kind of Bird

Chicken can get boring sometimes. You feel over saturated on it because that’s all you make at home. It happens. It just means it’s time to switch things up!

Instead of Chicken, lets make Turkey! Don’t get a whole turkey, you don’t need that much. You can find turkey breasts in your local grocery store. Be sure you look at how much it weighs, since the time cooking turkey is determined by weight. Mine had to cook for two hours. But it came out so juicy and delicious! Pair it with a side of green beans, and you have a complete meal! I added chopped garlic to my green beans to add a little more flavor.

Herbed Turkey Cutlet

Prep Time: 10 minutes
Total Time: 30 minutes
Cook Time: 20 minutes

Ingredients

  • 1 tablespoon liquid-egg substitute
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon flour, all-purpose
  • 1/2 teaspoon sage, ground
  • 1/2 teaspoon rosemary, dried
  • 3 1/4 ounces turkey cutlet, raw
  • 1 1/4 teaspoons extra virgin olive oil
  • 2 tablespoons low-fat sour cream

Preparation

  • Preheat oven to 350°F. Lightly coat a shallow baking pan or sheet with cooking spray.
  • Mix together egg substitute and 1/2 tsp. of the mustard. In a separate bowl, mix the flour, sage, and rosemary.
  • Dredge turkey cutlet first in the egg substitute mixture, then in the flour mixture to coat evenly. Drizzle with olive oil.
  • Bake for 10 to 15 minutes, or until turkey is cooked through. Don’t forget simple salt and pepper. Even those on low-sodium diets who will favor this heart-healthy recipe can benefit from the taste you get with just a sprinkle of proper seasoning.
  • Combine sour cream and remaining 1/2 tsp. of mustard. Drizzle sour cream mixture over the cooked turkey to serve, or use as a dipping sauce.

Green Bean Almondine

Ingredients

  • 1 cup snap green beans, fresh
  • 1/4 teaspoon extra virgin olive oil
  • 1/2 teaspoon almonds, slivered

Preparation

  • Steam green beans in your microwave or stovetop until crisp tender; drain. While still warm, toss with olive oil and almonds.
