Lemony Salmon’s Series of Fortunate Events

I love fish, and including great quality fish into your diet will yield numerous benefits. Salmon is really good for you, because it contains a large amount of omega fats. Why are the omegas good for you? WebMD explains it all for you here. Here’s just one little tidbit from the experts:

“Omega-3 fatty acids are considered essential fatty acids. We need them for our bodies to work normally. Because essential fatty acids (ALA,DHA,EPA) are not made in the body or are inefficiently converted from ALA to EPA and DHA, we need to get them from our diet .”

So without further ado, I give you the fortunate event of Lemon Salmon with Olives and a side dish of Marinated Tomatoes and Basil. Enjoy!

Lemon Salmon with Olives
Prep Time: 5 minutes or less
Total Time: 20 minutes
Cook Time: 15 minutes

Ingredients
4 1/2 ounces wild Alaskan or Washington salmon, fresh
1 lemon
4 olives, green or black depending on preference
1/2 teaspoon margarine, canola-based, trans-fat free

Preparation
Preheat oven to 450°F.

Place salmon on foil-lined baking sheet. Cut lemon in half. Squeeze juice from 1 half; set aside. Cut other lemon half and olives into thin slices. Place lemon and olive slices over salmon. Sprinkle with pepper to taste. Pull up the sides of the foil and add reserved lemon juice. Dot with margarine. Cover with foil, folding edges together. Add fresh herbs if desired and seal edges securely.

Cook salmon for 8 to 12 minutes, or until fish flakes easiliy with fork.

Marinated Tomatoes Salad
Prep Time: 20 minutes
Total Time: 20 minutes
Cook Time: 0 minutes

Ingredients
1 tomato, medium
1 teaspoon garlic, chopped
1/2 teaspoon extra virgin olive oil
1/8 teaspoon salt
1 teaspoon basil, fresh, chopped
2 teaspoons balsamic vinegar

Preparation
Slice tomato.
Toss with remaining ingredients. Let sit, stirring occasionally. Enjoy with meal. Tasty mixed together with salmon in one bite!
