Herbed-Rubbed Pork Chop Lovin’

Whenever a recipe calls that the protein be rubbed with some kind of spices or paste, you must do it lovingly. It adds flavor because it won’t fall off if you do it right. That is the case in this recipe. It’s delicious, and the brussel sprouts are amazing. I only put them in for 30 minutes instead of the 50 the recipe calls for. They were pretty done by then, and I didn’t want to blacken them.

Herb-Rubbed Pork Chop
Prep Time: 5 minutes or less
Total Time: 25 minutes
Cook Time: 20 minutes

1 garlic clove
1 1/2 teaspoons cumin, ground
1 1/2 teaspoons coriander, ground
1/2 teaspoon olive oil, extra virgin
4 1/4 ounces pork sirloin chops, raw, boneless


  • Mix the garlic, cumin, coriander, and Oil to form a paste. Season the pork chop with black pepper, and rub with the paste.
  • Coat a skillet with non-stick cooking spray. Heat to medium.
  • COOK the pork chop about 5 minutes on each side, or until no longer pink inside.

Roasted Brussel Sprouts
Prep Time: 5 minutes or less
Total Time: 50 minutes
Cook Time: 45 minutes

3/4 cup Brussels sprouts, fresh
1/2 teaspoon extra virgin olive oil
1/8 teaspoon black pepper


  • Preheat oven to 400°. Coat a baking sheet with cooking spray.
  • Toss brussels sprouts with olive oil and pepper.
  • Place on baking sheet and roast for 30-45 minutes. Shake pan every 5-10 minutes for even browning.
